Braised Pig Hand Cubes In Spicy Sauce

 

Putonghua : tu fei zhu shou


 
Ingredients
Frozen Pig Hand Cubes  500g                   Minced Ginger  1 tbsp                 Chopped Red Pepper  2 pcs
Chopped Spring Onion  1tbsp

Sauce A
Dark Soy Sauce  5 tbsp            Light Soy Sauce  3 tbsp              Shaoxing Wine  3 tbsp
Dry Ground Star Anise  2 pcs            Cayenne Pepper  20 pcs               White Pepper  10 pc
Rock Sugar  50 g               Salt  1 tbsp             Spring Onion  2 stalks          Ginger  10 sloces

Sauce B
Dark Soy Sauce  1 tbsp          Red Chili Oil  2 tbsp           Cayenne Pepper Oil  1 tbsp
Sugar  1 tbsp             Salt  1 tbsp            Sesame Oil  1/2 tbsp

Steps
1) Wash pig hand cubes, burn away hair, cook by boiled water for 10 minutes
2) Chill cooked pig hands cubes by cool water, soak for 10 minutes then drain dry
3) Heat wok with 1000ml of water, add in sauce A while water is boiled, stir well
4) Cook soup for 15 minutes in high heat, add in pig hand cubes, cover lid then turn into low heat
5) Cook pig hand cubes in low heat for 20 minutes, pick up and place into container without soup
6) Heat wok with 1 tbsp of oil, add in ginger slices and peppers, stir fry for few seconds
7) Add in 4 tbsp of cooking soup, then add in sauce B, stir cook for 1 minutes
7) Pour boiled sauce onto cooked pig hand cubes, sprinkle chopped sping


Remark
tbsp - table spoon
If you like spicy, add more chili oil and cayenne oil........
